How to Make Gnocchi & Ground Beef Casserole

Easy Mexicali Dinner - Serves 6

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 6 oz (3 cups) medium noodles, cooked and drained
  • 1 pound can of diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 1/2 cup shredded sharp cheese
  • 1/2 cup sliced ripe olives
  • 1 teaspoon salt
  • 1/4 teaspoon dried basil, crushed
  • 1/8 tsp pepper

Directions

  1. Cook meat and onion in large skillet until onion is tender.
  2. Stir in noodles, tomatoes, tomato paste, 1 cup shredded cheese, olives and seasonings
  3. Turn into 2 quart casserole
  4. Top with remaining 1/2 cup shredded cheese.
  5. Bake at 350 degrees for 45 minutes.

Hamburger Casserole for Crock Pot

Ingredients

  • 2 large size ptoatoes, sliced
  • 2 to 3 medium carrots, sliced
  • 1 can peas, well drained
  • 3 medium onions, sliced
  • 1 1/2 pound lean ground beef, browned, drained, and rinsed
  • 1 (10 oz) can tomato soup
  • 1 (10 oz) can water

Directions

  1. Place layers of vegetables with potatoes on the bottom.
  2. Season each layer with salt and pepper.
  3. Place lightly browned ground beef on top of the celery.
  4. Mix the tomato soup with the water and pour into a crock pot.
  5. Cover and set to LOW for 6 to 8 hours (HIGH: 2 to 4 hours, stirring occasionally).
  6. Ingredients may be increased by half for the 5 quart model.

Italian Beef and Potato Casserole

Ingredients

  • 1 1/2 lb ground chuck
  • 1 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1 (32 oz) jar spaghetti sauce
  • 1/3 cup water
  • 1 tsp dried whole basil
  • 1 tsp dried whole oregano
  • 1/4 tsp pepper
  • 4 medium potatoes, peeled and thinly sliced
  • 2 cup (8 ox) shredded Mozzarella cheese

Directions

  1. Cook ground chuck, onions and garlic in a large skillet over medium heat until meat is browned, stirring to crumble meat.
  2. Drain
  3. Add spaghetti sauce, water, basil, oregano, and pepper, stirring well.
  4. Spoon 1/3 of meat mixture into a lightly greased 13x9x2 baking dish.
  5. Top with half of potato slices.
  6. Cover with 1/3 of meat mixture.
  7. Add remaining potato slices and remaining meat mixture.
  8. Cover with aluminum foil.
  9. Bake at 375 degrees for 1 hour or until potatoes are tender
  10. Remove foil and sprinkle cheese over casserole.
  11. Bake an additional 5 minutes or until cheese melts.
  12. Let casserole stand 10 minutes before serving.

Stuffed Cabbage Rolls - Serves 4

Ingredients

  • 12 cabbage leaves
  • 1 pound ground beef
  • 1/2 cup uncooked instant rice
  • 1 can (15 oz) tomato sauce
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic salt
  • 1 can (4 oz) mushroom stems and pieces, undrained
  • 1 tsp sugar
  • 1/2 tsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp water

Directions

  1. Cover cabbage leaves with boiling water.
  2. Cover and let stand until leaves are limp, about 10 minutes.
  3. Remove leaves
  4. Drain
  5. Mix ground beef, rice, 1/2 cup of the tomato sauce, the salt, pepper, garlic salt, onion and mushrooms
  6. Place about 1/3 cup beef mixture at stem end of each leaf.
  7. Roll leaf around beef mixture, tucking in sides.
  8. Place cabbage rolls, seam sides down, in ungreased square baking dish, 8x8x2 inches
  9. Mix remaining tomato sauce, the sugar, and lemon juice
  10. Pour over cabbage rolls
  11. Cover and bake in 350 degree oven until beef is done, about 45 minutes.
  12. Pour the liquid from cabbage rolls into 1-quart saucepan.
  13. Mix cornstarch and water
  14. Stir into cabbage liquid.
  15. Heat to boiling, stirring constantly.
  16. Boil and stir 1 minute.
  17. Serve sauce with cabbage rolls.

Impossible Cheeseburger Pie

Ingredients

  • 1 pound ground beef
  • 1 1/2 cups chopped onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups milk
  • 3 eggs
  • 3/4 cup buttermilk baking mix
  • 2 tomatoes, sliced
  • 1 cup shredded Cheddar

Directions

  1. Heat oven to 400 degrees.
  2. Grease pie plate, 10 x 1 1/2 inches.
  3. Cook and stir gorund beef and onion over medium heat until beef is brown
  4. Drain.
  5. Stir in salt and pepper.
  6. Spread in pie plate.
  7. Beat milk, eggs, and baking mix until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  8. Pour into pie plate
  9. Bake 25 minutes until knife inserted in center comes out clean, 5 to 8 minutes longer.
  10. Cool 5 minutes.
